"Somewhere She'd Like" fits what the title suggests: a journey about understanding what Fern wants and what her desires are. Stark is searching for a hidden hot spring while nervously preparing to go on a date with Fern; Frieren uses her wisdom from Heiter to help each of them break through their personal barriers and reach an emotional breakthrough.
A Journey to the Hidden Hot Spring

In Frieren: Beyond Journey's End Season 2 Episode 3, Frieren, Fern, and Stark travel north to the land of the volcano and find the temperature in this region to be much warmer than expected due to its active volcanic state. The crew looks forward to resting at a nearby hot spring that Frieren recalls from years before.
When they get there, they find the place has been deserted. Most people left because the hot springs dried up 30 years ago. Only a few have stayed in an area that used to be full of life. This moment is another example of how places where people used to live can change very quickly from an elf’s perspective.
An elderly villager tells them that there’s a secret hot spring hidden deep in the mountains. Stark is eager to go, and Frieren reluctantly agrees to go with him so that her friends can continue on their quests.
Battling Monsters on the Mountain in Frieren: Beyond Journey's End Season 2 Episode 3

In Frieren: Beyond Journey's End Season 2 Episode 3, the group works together as a whole on their mountain trek and encounters a dragon-type monster with multiple heads stored in an ancient fort. The monster has a regeneration ability and requires the heads to be cut off at the same time to defeat it.
Frieren develops a strategy and uses Stark as bait so that the monster is distracted while she and Fern attack it at the same time. The plan works, but Stark suffers a lot of mental anguish from being used as bait. The way that the fight takes place shows how well the group is becoming more coordinated without needing to have long fight scenes.
The Modest Reward in Frieren: Beyond Journey's End Season 2 Episode 3
After an awful climb and a trip full of trouble, the gang finally arrives at the famous hot spring, but they find it's only a small foot pool (not a full hot spring). So when they got there, it felt like a big letdown because this is where their trip led to.
However, Stark expresses genuine happiness with the outcome. The spring isn't too deep, so he and the other two don't have to split up while they're visiting. This was a good connection to something embarrassing that happened in the last episode when Stark found Frieren and Fern bathing.
In Frieren: Beyond Journey's End Season 2 Episode 3, Stark reveals he learned about this hidden spring from his master, Eisen. Eisen took the Hero's party to the same place where they had been together. To Stark, the views he and Eisen saw with their friends together mean more to him than anything else could.
Date Preparations and Parental Wisdom

The second half of Frieren: Beyond Journey's End Season 2 Episode 3 starts in a neighboring fortress with hot springs. Frieren has the accessibility to take a long soak, then Fern and Stark discuss their plans. Stark is taken by surprise with Fern's decision to go out on a date with him and is left momentarily speechless, but finally agrees.
When Stark is shocked that Frieren knows him so well, she is quick to explain that everything he knows about Fern was told to her by Heiter (the father figure/adoptive father of Fern) through a flashback of the corrupt priest trying to help Frieren become a proper father to the young mage.
Fern's Perspective
Fern asks Frieren for help with the date and goes into her room and tells her an old story about her two past "dates" (neither of which she thought they were until now: Himmel and Zain). She explains to Fern that any time two people of the opposite gender go out together is considered a date.
Frieren: Beyond Journey's End Season 2 Episode 3 is filled with Fern's nervousness about going on her date. The night before her date, she looks at the moon to show just how much she wants to be with Stark (whom she is developing feelings for) and that she no longer has a stoic personality but sometimes seems shy about being with him.
